With energy efficiency at the forefront of any product concern list, the current Polin model has been developed to use less than 400 watts to heat the product during the prove cycle, alongside other effective energy saving elements that make certain of awareness to consumption. Inclusive of automatic cleaning cycles and low consumption compressors, the Polin Avant model uses 40% less energy than traditional retarder provers.
With two options for controlling and reporting, the systems are built to offer straightforward yet specific functionality alongside structure and build, to accurately meet the requirements of a modern baking facility.
With the structures of the units, internal panels are as standard finished in stainless steel offering longevity and reliability, without the risk of compromise by means of temperatures within being accurately kept and no possible rust.
A thicker floor than most competing models ensure further insurance against heat loss and no condensation. Side panels are interlocked over the floor sections to ensure no leaks and a ramp, which can be removed for cleaning, allowing for easy rack transfer.

Evaporator pipework is thinner than most competitors to allow for more efficient evaporation, whilst the drain is manufactured in stainless steel to avoid rust in this often weak area.
Controlling and monitoring the Retarder prover is easy and straightforward with the extremely visually friendly colour touch screen panel. With a clear, concise and an easy to follow display of each phase within a cycle, the panel offers visual, as well as audible, alarms for each phase if required, as well as the end of a cycle.
The user can control and manipulate cycle and phase time, temperature, fan speed as well as heating and cooling functions. Each of the stored programmes can feature up to 8 phases allowing for complete flexibility for any type of product. Alarm recording ensures users can review cycles for continuous improvement.
The adaptable programming allows for various methods of proving to easily be replicated including traditional retarding and proving to prevent the natural yeast development. Options suitable for frozen product that offer a ‘rising’ cycle to include thawing, a monitored ‘natural’ proving cycle allowing for on demand readiness of product in around 3 minutes and a ‘slow’ cycle suitable for longer fermented products for controlled proving over very long periods.
For bakeries requiring further programming options, the ‘Industry 4.0’ model features 100 cycles, of which 90 can be programmed to suit the users individual requirements and real time reporting of the functions of the cooling system functions. This option is suitable for larger sites with greater production variation.
Polin Retarder provers are available in single and two door models with either a standard or tunnel-type configuration, capable of housing multiple racks up to 10 deep.
